Minimum specified oil pressure at idle for this engine is 5 psi. At 3000 RPM, the oil pressure should be between 45 and 105 psi.

You might want to pull that sender out again and make sure the passage leading to it is clean. If the engine is sludged up the pressure may be good but if the passages are clogged, you won't be getting oil where you need it.

Are you using the proper weight oil?
