Default General Stereo Replacement Questions

Im upgrading the stereo on my 1995 Chrysler Concorde and have never done something like this before.

My current in-dash stereo is 6-21/32" in depth with a size code of CG,E,GC. I purchased a cheap in-dash mounting kit to (I assume) go over the new stereo once inserted and cover up the blank space (correct me if im wrong).

I have successfully removed my old stereo, once unplugged I am left with what looks like some old school 90's wiring (two plugs: one black, one gray) along with the antenna connection. What is the easiest way to convert these wires to work with modern in-dash stereos?

And finally, with my proposed setup (mounting kit + converted wires) Will any standard 1-DIN IBJ in-dash stereo fit snugly into my dash with the mounting kit over it? Or am I still limited and should narrow my purchase to guaranteed fits on crutchfield or amazon?

Appreciate any possible help guys

I had a good experience with Crutchfield with my stereo, but bought my speakers at Onlinecarstereo.
