300 touring Catalytic converter

Hello to all
nooby here with this question:
I am planning on removing the catalyst converter and replace it with a straight pipe.
I expect the check engine light to turn ON;
Any solutions to turn it off? trick it ?

Note: passing inspection etc is not an issue here since the car is overseas where they use regular gas which cooks the converter..no unleaded fuel !

it is 2007 300 touring with 6 cyl 3.5 engine.

your help and advise are much appreciated.

I dont think that light can be turned off? just not 100% sure. only idea i have is to remove the guage cluster and remove the little bulb that lights up the engine light. Or if somehow you can trick the cars computer into thinking converter is still there? me thinks it would be easier to remove the bulb i speak of?
