Does Anyone Tow With Their Pacifica

We just bought an 05 AWD Pacifica with 8500 miles on it. It's the standard model. Got the Pacifica to replace our Subaru Outback, which has a 130k on it and is in mint condition, quite honestly does not need replacing. The Outback is/was my wifes winter snow car and my kayak, bike, and all around stuff carrying car. But, in the past few years I have gotten into road racing. In the past I would rent an SUV and tow dolly to tow my track car to the track. The Subaru is not capable of towing. My wife is anti-suv, so replacing the Outback with a real suv (for towing purposes)was not an option. That's how I came up with the Pacifica. Not an suv for my wife to use and a tow vehicle for me. My question is, what are you towing and what type of towing equipment do you have installed on your Pacifica?
