Thermostat problem?

Hi, I have a 98 plymouth breeze that we got recently and i fixed a couple things on it, did the wheel bearings and alternator serp belt, along with a few vaccuum hoses here and there. I was wondering two things

are there any specific things i should check other than general stuff (oil, fluids, spark plugs) that were known to have issues on these cars

the other is, when the car is driven for a while, the needle for the temp gauge never reaches horizontal. it's about a notch under pointing dead level. should i check the thermostat, the ect sensor, or is this just normal on the car?

Thanks so much guys!

Yeah it's probably broken. They're really easy to do...
