Default 2006 Pacifica Heating Issues?

There are a few things going on with this vehicle all surrounding temperature; not a car person, but have no choice but to try to deal with this on my own, so hoping someone can point me in the right direction!
1. Heater blows cold air almost constantly.We bought this vehicle recently, and when we first started using the heater, it was mostly hot air but once in a while would blow cold. Now it's totally the opposite: blows cold air constantly, but every now & then we feel a burst of hot.
2. Was driving as normal today when I looked down at a notification on dash, only to see temp gauge was redlined! I slowed down, cranked up the "heater," (air was STILL blowing cold) and needle dropped immediately. When I got where I was going, engine felt cool still. Babied it all the way home regardless, making sure it did not redline again.
*obd2 sensor dashboard (in phone) and in dash gauge both showed car running hot, borderline red line, but diagnostic report showed coolant temp was only 165 degrees.
Is there a thermostat or temp sensor that could go bad that would affect both of those?

you have low coolant and a leak somewhere
