It'll shut down after the engine blows. Do you suppose it's there for a reason?

I always thought a 2.7 would begin meltdown and slip into another dimension at 90 mph

The warning isn't there to tell you you are driving too fast. It's there to tell you the engine is turning too fast and that it won't last very long at that speed. You say listening to it for 4-6 hours will blow your head. Ignoring it will blow your head gasket, wipe your bearings or worse.
Are you running the necessary speed-rated tires? A blowout at 100 mph is not a pretty thing.
