2005 2.8 Grand Voyager CRD engine temperature too high

Default 2005 2.8 Grand Voyager CRD engine temperature too high

I have a 2005 grand voyager with 2.8 CRD engine. It has done 150.000km.
What concerns me is, that whenever I go even slightly uphill, engine temperature gauge starts rising, yesterday it got almost to the red area, but immediately when I started going down the hill, the temperature dropped below half.
I am not used to that because on all other cars (other brands) that I drive, the temp. gauge is standing still on working temperature, but on the voyager it is very restless, always going up and down.

Any ideas? Or is this normal for this car?

No not normal is the water level good? cooling fans work ok?

Water level is ok. When should coling fans turn on? Because I don't think I have ever hared them.
