Does the engine restart immediately, for example, slip trans into neutral and restart? What are the conditions when the engine dies, stopped, city/urban start/stop conditions, highway driving?

How often does this occur, every trip, every other trip, multiple times during a trip?

If the fuel pump shuts off while driving, there is still pressure in the system and the engine will usually begin to sputter as the fuel pressure drops. If the engine simply dies I would not suspect the fuel pump or relay at this time.
