Default Rad fans and revs

Hi new to the forum.

The fans by the radiator dont work automatic no more which caused overheating, but whenI unplugthe coolant sensor they come on and stay on,then my rev counter dial moves up and downand gettinga whoshing/whistle sound from somewhere under the bonnetany ideas what could be happening

Thanks
